Pollo Tropical restaurants offer a wide variety of freshly prepared Caribbean-inspired food. Taco Cabana restaurants offer a broad selection of hand-made, freshly prepared, and authentic Mexican food. Both restaurants belong to the value-oriented fast-casual restaurant segment, which combines the convenience and value of quick-service restaurants with the variety, food quality, décor, and atmosphere more typical of casual dining restaurants. Additionally, almost all of the restaurants offer the convenience of drive-through service.

As of June 2014, Fiesta Restaurant Group owned 112 Pollo Tropical restaurants and 166 Taco Cabana restaurants.

Fiesta franchises its Pollo Tropical restaurants primarily internationally. As of June 2014, it had 35 franchised Pollo Tropical restaurants in Puerto Rico, Ecuador, Honduras, Trinidad & Tobago, The Bahamas, Venezuela, Costa Rica, Panama, the Dominican Republic, Guatemala, and on college campuses in Florida.

Fiesta has agreements for the continued development of franchised Pollo Tropical restaurants in a few existing markets, and also commitments for additional non-traditional locations in Florida.

Taco Cabana

As of June 29, 2014, Fiesta had four Taco Cabana franchised restaurants in New Mexico and three non-traditional Taco Cabana locations on college campuses in Texas.
